Lentil Rice Wraps with Sweet Chili Dipping Sauce

This no-cook recipe combines tender green lentils, fresh snow peas, and chopped avocado and red pepper in healthy rice wrapper rolls. Served with a 3-ingredient dipping sauce that's sweet, sour and spicy.

Ingredients

Liquid honey 1/3 cup
Rice vinegar 1/4 cup
Crushed chili flakes 1 teaspoon
Green lentils, drained and rinsed 1 540 ml / 19 fl oz can
Fresh snow peas, julienned 20
Diced red pepper 1/2 cup
Avocado, peeled, pitted and diced 1
Juice of one lime 1
Rice paper wrappers 12-14
Cilantro leaves as garnish (optional) A few
Prepare the Dish
  1. Make the dipping sauce by stirring together the honey, vinegar and chili flakes in a medium mixing bowl, and set aside. In a large mixing bowl, stir together the lentils, snow peas, red pepper, avocado and lime juice. Soak a rice paper wrapper on a plate of warm water for 10 seconds.

  2. Lift to allow the water to drain off then transfer the wrapper to a cutting board. Scoop a 1/4 cup of the lentil mixture onto the middle, bottom third of the wrapper. Lay some snow peas horizontally across the filling. Fold the bottom of the wrapper up over the filling and snow peas, rolling once. Tuck the sides of the wrapper in over the filling, then continue rolling away from yourself until the wrapper is fully rolled. Continue until all wrappers are filled. To serve, cut rolls in half, garnish with cilantro if desired, and serve with the dipping sauce.
