Make the dipping sauce by stirring together the honey, vinegar and chili flakes in a medium mixing bowl, and set aside. In a large mixing bowl, stir together the lentils, snow peas, red pepper, avocado and lime juice. Soak a rice paper wrapper on a plate of warm water for 10 seconds.
Lift to allow the water to drain off then transfer the wrapper to a cutting board. Scoop a 1/4 cup of the lentil mixture onto the middle, bottom third of the wrapper. Lay some snow peas horizontally across the filling. Fold the bottom of the wrapper up over the filling and snow peas, rolling once. Tuck the sides of the wrapper in over the filling, then continue rolling away from yourself until the wrapper is fully rolled. Continue until all wrappers are filled. To serve, cut rolls in half, garnish with cilantro if desired, and serve with the dipping sauce.
