I’ve been on a big lentil kick lately and trying to find unique and creative ways to add these super foods into my diet. Also, I feel very guilty for living in the Canadian province of Saskatchewan which produces 99% of Canada’s lentil crops, so I really should be getting a lot more lentils into my diet. So this is a continuation of my adventures of explore these fabulous little pulses! These lentil bars taste awesome and are packed full of goodness making them great for a grab-n-go breakfast, fuel/recovery snack for athletes or just a healthy, gluten-free snack. However, I'll put a warning out now - they are highly addictive and you'll find yourself wanting to eat more than just one!

| chocolate chips | 1/2 cup |
| cocoa powder | 1 tbsp |
| cooked lentils (your choice of lentils) | 2-3 cups |
| ground flax seed | 4 tbsp |
| hemp seed | 4 tbsp |
| almond flour | 4 tbsp |
| chai seeds | 2 tbsp |
| shredded coconut | 1/4 cup |
| sunflower seeds (unsalted) | 2 tbsp |
| pumpkin seeds (shelled) | 3 tbsp |
| rolled oats | 3/4 -1 cup |
In the mixing bowl, along with the lentils, add in the flax seed, hemp seed, almond flour, chai seed, coconut, sunflower seeds, pumpkin seeds and the rolled oats. Mix until combined.
If you need to cook your raw lentils, start by measuring and rinsing 1-2 cup of dried lentils (I used 1/2-1 cup red lentils and 1/2-1 cup green). Once the lentils have been rinsed, place in large pot and add three to four cups of water, and bring to low simmer for 15-20 minutes (NOTE: The time starts as soon as you put the pot of water/lentils on the stove – so it will be cold for a bit, so essentially the lentils are only simmering on heat for roughly 5-10 minutes depending on your stove). Drain lentils and place in large mixing bowl.
In a medium sauce pan, combine the peanut butter and honey. Stir frequently over a medium heat – be careful not to burn. Once it’s turned into a thick liquid, turn off heat and add in chocolate chips and cocoa. Once it’s completely melted together, add into your lentil/dry ingredients bowl and mix until completely combined.
Pour your mixture into a saran wrap lined glass bakeware (8×8 or size of choice depending how thick you want your bars) and place into the freezer for roughly 3 hours until it’s had time to set. Remove, cut into bars, individual wrap and keep in the fridge or freeze again.
